We picked black berries today. About a half gallon. It was very Mark Twain/Huck Finn because we literally had to walk down some old railroad tracks and back into the brush to get to them. It was fun!
And using an online recipe, J made a cobbler which was so good I simply said, “It tasted like home.” I couldn’t resist taking photos of the process. And the recipe as a whole was so simple! Back home, things always seemed so complex when Mom was making it! Ours tasted just as good. Mom would be proud.
And yes! I’m going to share the recipe!
Ingredients-
1 stick of butter melted
1 cup of milk
1 cup of buttermilk pancake mix
2.5 cups of blackberries
1 cup of sugar
pinch of salt
Directions:
-Heat oven to 375.
-Wash the berries and mix them with the cup of sugar until all berries are coated with sugar.
-Mix the pancake mix, milk, butter, and salt. Pour this batter onto the bottom of an ungreased 8×8 baking dish.
-Spoon the berries over the batter.
-Bake for 45 minutes until the dough rises and turns golden.
Serve with vanilla ice cream or whipped cream!
